i picked this up in italy, as a topping they would give us hot oil. its a pretty simple concept but a great topping.
you can do it in a little karaffe, or jar, or fancy glass container and is a nice posh little thing you can do it goes well with pasta, salads, sandwiches, etc..
HOT OIL:
mix black peppers, crushed rep peppers(tons of red peppers), garlic cloves, salt and oregeno in a little glass container. put a cup or half up of oil in. leave sitting around for a few hours and you can instantly start using this. when the oil gets too hot pour more plain oil in, its an infinite well of spice and flavor. not infinite, if you get into this style i reccommend making a new batch every few weeks.
