share some of your favorite potato recipes.

roasted garlic mashed potatoes.

cut the top off a head of garlic, place in tin foil drizzle with olive oil and bake for about an hour. or until the garlic is so soft when you squeeze the sides of the garlic head the garlic just comes out.

boil some potatoes until very boiled. strain, put back in pot and cook dry to get rid of all the water. then add a little unsweetened soymilk and start mashing. mash until chunky then add a good amount of earth balance (at room temp) and a couple good spoonfuls of vegan sour cream and squeeze in the whole garlic head, add a good pinch of salt and a lot of grounds of black pepper. continue to mash until very smooth, keep adding small amounts of soymilk and earth balance until its very creamy. taste and adjust seasoning.

i like to grill up some portabellas and asparagus for this.

that sounds good.

i love sweet potatoes, bake the hell out of them, salt pepper and earth balance...or for breakfast i love fried potatoes, boil, drain, dice and fry with olive oil, salt lots of pepper, some cayenne and dried herbs, onion, with some thinly slice fried tofu...

we just made a sweet yam / plaintain mash... mash potato sort of thing (green-yellow plaintains can be cooked like potatoes)..

two large plaintains, a medium sized yam, one minced garlic clove, half a tsp of sea salt, a little lemon, and a little pepper...

make it like you'd make mashed potatoes.

don't need to season it much, just enough to complement the inherent awesomeness of those two things.
