i cut a half block of extra firm tofu in half and cut lengthwise saving the other half for tommorrow, seasoned strips with a pinch of sea salt and fresh black pepper, fry in peanut oil mixed with a little sesame oil for about five minutes on each side, drain on paper towels and set aside.
meanwhile in a med size pot sautee;
three chopped carrots
about a 1/2 cup snow peas, chopped in half
half a red bell pepper cut in strips for about 10 mins.
throw in 2 chopped scallions and a clove of garlic...sautee another 1 or 2 mins. add your fried tofu
pour in a can of coconut milk
and a tbls. and a half of hot red curry paste, dissolve into coconut milk
simmer for 10-12 minutes
if you want serve over jasmine or basmati rice.
eat.
and keep some tissue around to blow your nose and wipe the sweat...
