about 8oz. unsalted peanuts
BIG handful of ginger
3-4 cloves garlic
hot sauce (tims recipe)
4-8oz. chopped frozen spinach
about a cup of water
olive oil
salt
boil the peanuts for 30-40 minutes until there is only a very thin line of raw peanut when you cut into the peanut.
drain peanuts and toss into blender with garlic, ginger, good amount of salt, about 1/3 cup of water and around a tbl. of olive oil. blend until smooth. you want this mixture to be thinner than peanut butter so if its thick then add more water.
then put into a saucepan and add 2 spoonfuls of the hot sauce and simmer for 20-30 minutes. about halfway through this time, add in the spinach, add as much as you want. i like it spinach heavy but its good without much at all. just keep simmering it and tasting it, you may need to add more salt or hot sauce, however you like it. then serve over rice (you pretty much have to serve this over rice because its a bit gritty but great with rice.)
