the people's republic of sole

this is something that i'd never really done before but started having a go at the past couple of weeks.

First loaf was wholemeal, and kinda plain in flavour and texture. Next up was a kind of focaccia style thing with wholemeal flour and topped with red onions - looked and tasted good, texture wasn't really dense enough though
Just made a loaf today that's really good, lovely chewy texture. I used more expensive wholegrain seeded flour, but also kneaded & proved it for longer - and also didn't use any oil as I read oil makes bread softer (rather than chewy).


So yeah, I'm really happy with how that turned out and would like other recipes you've made.
Also, I'd be really interested in general tips about how different preperation affects the bread - types of flour/ time to knead & prove/ amount of water or yeast and the like.
