Hey! I need help with something..
I'm going home to my mom for jul, witch is christmas without the christ part.. Or the pagan celebration which is still going strong in over here (except for the whole consumerist part witch has of course overtaken it to a certain degree).
And the important part of a jul celebration is of course a feast to fatten up for the rest of the winter! I'm not a big fan of traditions, but I mostly to this for my mom witch I don't see too often.

But every year it's the same.. The feast consist mostly of different types of meat. It has not been a problem for me to find alternatives before, but this year my friend who is vegan and cannot eat seitan and has problems with tofu as well is joining. I'm not sure exactly what's wrong with her but seitan is no-no, and soya products are ok to a certain degree.

What to make? It would be cool to make some kind of steak or big lump of something good tasting witch also looks good! I'm good at making all kinds of veggieburgers but if you have a better idea, please :)

"the bomb diggity"

Ingredients:

1/2 cup pecans
2 TB olive oil
One onion, diced
One large garlic clove, minced
One large carrot, peeled and grated
Two celery ribs, diced
One cup mushrooms, cleaned and chopped
One jalapeno chile, seeded and minced
2 cups cooked black beans
1 cup cooked brown rice
1/4 to 1/2 cup vegetable broth, as needed
1/2 cup cooked oatmeal
1/4 tsp. dried thyme
1/2 tsp. dried sage
1 tsp. dried basil
1/4 cup minced fresh parsley
1/4 tsp. dried oregano
1/4 tsp. dried rosemary
1 tsp. ground cumin
Freshly ground black pepper, to taste
2 TB soy sauce
Directions:

Preheat the oven to 350º. Spray a loaf pan or 8x8 square baking pan with nonstick spray and set aside (an 8x8 pan makes a crisper loaf).

Grind the pecans into a coarse meal using a food processor or spice/coffee grinder. Place in a large mixing bowl and set aside.

Sauté any vegetables you've chosen in the olive oil until soft. Add to the large mixing bowl along with all the remaining ingredients. Mix and mash together well, adding only as much liquid as needed to create a soft, moist loaf that holds together and is not runny (you may not need to add any liquid if the grains and protein are very moist). Add more binder/carbohydrate as needed if the loaf seems too wet.

Press mixture into the prepared pan and bake for 45 minutes to 1 hour, or until cooked through.

Let the loaf cool in the pan for 10 to 15 minutes, then turn out onto a plate or platter and slice. Serve with potatoes, vegetables, and vegetarian gravy, if desired.

Cold leftover slices of the bomb diggity make a great sandwich filling.
